Description
One dried leaf in the pot, and your pulao suddenly smells like it came from someone’s wedding kitchen.
What It Is
Our Whole Bay Leaves (Tez Patta) are dried, long, and slightly curled, with a deep olive-green colour. They’re a quiet but essential part of pulao, biryani, and slow-cooked meat dishes across Pakistani homes.
Taste, Smell & Colour
The taste is mild and slightly bitter on its own, but that’s not really the point — it’s the smell that matters, a warm, herbal scent that comes out slowly as it simmers. The colour is a deep green with lighter veins running through, dry and papery to the touch.
Texture
Thin, dry, and slightly brittle. It softens a little in liquid but stays whole enough to pick out easily before serving.
Used In
- Pulao and biryani
- Meat curries and yakhni
- Garam masala blends
- Daal, for a background aroma
Other Uses
- Add to soups and stews for a warm, herbal note
- Infuse into rice water before cooking plain rice
- Use in marinades for slow-roasted meat
- Add to simmering lentils for extra depth
Why Buy This One
Bazaar bay leaves are often old, broken, or faded in colour, which means weaker smell and less flavour in the pot. This one stays whole and holds onto that deep green colour, so the aroma actually comes through when it simmers.
We pack it in craft paper, not plastic. That keeps the leaves dry and their natural oils intact, without any plastic smell mixing in over time.
How To Store
Keep it in a closed container, away from moisture and direct sunlight. Stored properly, the leaves stay aromatic and strong for a long time.
If your pulao or biryani ever smells a bit plain, it’s usually this. One or two whole bay leaves are often what give that dish its proper, familiar aroma.
