What It Is
Our Smoky Black Cardamom (Bari Elaichi) comes as large, dark brown pods, rougher and bigger than green cardamom, with a smoky character all its own. It’s a key part of heavier, slow-cooked Pakistani dishes like yakhni, biryani, and rich meat curries.
Taste, Smell & Colour
The taste is smoky and slightly bitter, much stronger and earthier than green cardamom. The smell is deep and campfire-like, with a hint of menthol underneath. The colour is a dark brown to almost black, with a rough, ridged outer shell.
Texture
Hard and papery on the outside, holding sticky black seeds inside that carry most of the smoky flavour once crushed.
